Brass and copper topes and patilas

A tope is a deep, round cooking pot with a wide mouth, for milk, rice, dal and gravies. It is also called a patila, and a small one a patili. Caterers, halwais and hotel kitchens buy topes in a run of graded sizes; homes buy the smaller ones.

What to know about topes and patilas

Choose topes by capacity, wall thickness, kalai and lid. Kitchens buy a run of sizes, so list each size code you need. A thicker wall spreads heat more evenly and dents less; compare weight for size. Brass and copper topes for cooking need kalai, a tin lining, inside. Tin melts at about 232 °C, so never heat a tinned tope empty. Re-tin when brass or copper shows through the silver lining.
