Brass and copper tawas

A tawa is a round, flat or slightly curved griddle for rotis, parathas and dosas. Most tawas sold today are iron or steel; brass is the older choice. A mahi tawa is a wide, tray-like griddle with raised edges, used in Awadhi kitchens to shallow-fry kebabs. We make brass tawas with and without a handle, hammered, and as a dosa set.

What to know about tawas

Choose a tawa by diameter and thickness. A thick tawa holds heat evenly and does not warp when rotis are made one after another. A handle helps on a home stove; a tawa without one sits flat on a large burner. Brass and copper are not magnetic, so they do not work on induction. Dry a brass tawa at once after washing.
