Brass, copper and kansa kadhais

A kadhai is a deep, round-bottomed pan, usually with two handles, for frying and cooking curries. It is also spelt karahi. A tasla is a wider vessel of the same family, also used for kneading dough. Halwais, restaurants and homes use kadhais for puris, sweets, namkeen and gravies.

What to know about kadhais

Choose a kadhai by diameter, depth, wall thickness and handles. Wider pans suit frying and sweets; deeper ones suit gravies. In a commercial kitchen, handle fixing and wall thickness matter most. Brass and copper kadhais for cooking need kalai inside. Kansa is mainly an eating metal, so do not cook or store sour dishes in it. Check the body metal: many “brass kadhais” sold online are iron with brass handles.
