A handi is a deep, round-bellied pot with a broad mouth, made for slow cooking. Its lid can be sealed with dough so the food cooks in its own steam, as in dum biryani. Small handis carry curries, rice and chaat to the table in restaurants.

Choose cooking handis by capacity and kalai, and serving handis by size and finish. A cooking handi needs kalai inside and a lid that sits flat for a dough seal. Serving handis, such as our baby and chaat handis, come etched or hammered for the table. Rice handis come with or without bidding, a beaded rim that stiffens the mouth.
