What to know about parats

Choose a parat by diameter and weight. Parats come in a long run of size codes, from household to wedding-kitchen sizes. Buyers often find a parat bigger than they pictured, so measure the counter first. A heavier parat stays put while dough is kneaded, and dents less. A bidding (beaded) rim stiffens the edge. Dough is not sour, so a kneading parat is often used without kalai.
