What to know about degs and degchis

Choose a deg by capacity, gauge, lid and handles. Caterers often ask how thick a biryani deg should be: compare weight for size, since heavier means thicker metal. For dum, the lid must sit flat so dough can seal it. Handles or rings must carry a full pot safely. Brass and copper degs for cooking need kalai inside. Copper spreads heat faster and more evenly; brass is heavier and wears well.
