What to know about katoris and bowls

Match bowls to your thalis by diameter and number. Restaurants usually keep two or three katori sizes, for dal, sabzi and a sweet. Cast watis are thicker and heavier; sheet watis are lighter and cost less. Bowls that stack save shelf space. Keep curd, kadhi and other sour dishes out of bare brass and copper. Kansa serves them for the length of a meal, but do not store food in it.
