A parat is a large, round metal dish with a raised edge, used above all for kneading atta. This one is copper, with a wide flat base and a sloping rim, hammered all over.
Homes use it for kneading dough for rotis and puris. Caterers and halwais use the bigger sizes for mixing, kneading and carrying food. It comes in three sizes: 13-14, 15-24 and 25-30.
Copper darkens with use. Clean it with tamarind or lemon and salt, then dry it. Keep sour food out of unlined copper.
Also called copper paraat, tambe ki parat.
