A kadhai (karahi) is a deep, round-bottomed pan for frying and cooking; the tasla is the brass vessel of the same family. HV223 is hammered brass with two loop handles riveted below the rim. Sizes run from 6-7 up to 26-29, codes HV223 to HV226.
Fry puris, pakoras and namkeen, or cook sweets and gravies. The small sizes fit a home stove; the large ones a halwai's or caterer's burner.
Brass needs kalai (a tin lining) inside before any cooking; sour and salty food react with the bare metal. Check the handle rivets now and then on a heavy pan.
Also called kadai, karahi, pital ki kadhai, tasla.
