About this product

A handi is a deep, round-bellied cooking pot, mainly for slow cooking. HV276 is brass, with a low, wide belly and a short, narrow neck. The body is hammered in rows of short dashes, and a seam runs round the base.

A handi's lid can be sealed with dough so the food cooks in its own steam, as in dum biryani. Use it for dum dishes at home or in a restaurant kitchen.

Brass needs kalai, a tin lining, inside for cooking. Re-tin when brass shows through, and never heat a tinned pot empty.
