Tadka is tempering: whole spices are fried briefly in hot ghee or oil and poured over dal and other dishes. It is also called tarka, chhaunk, baghaar, phodni in Marathi and vaghar in Gujarati. A tadka pan is the small pan for the job. Ours is brass, in sizes 1, 2 and 3.
Homes use it every day for dal, kadhi and chutneys. Restaurants pour tadka at the table, and the pan makes a useful gift.
If the pan is tinned, never heat it empty: tin melts at about 232 °C. Wash and dry after use.
Also called tadka pan, vaghariya, chhaunk pan.
