HV233, the tavi, is a wide, shallow copper pan with a flat base, a low wall and two loop handles riveted on. The outside is hammered copper, and the inside is tinned with kalai.
The broad, flat base gives an even surface for shallow frying, kebabs and tikkis, and for dishes finished in a thin layer. It goes from stove to table in a restaurant, and suits a home kitchen too.
Never heat it empty, because the tin melts at about 232 °C. Use a wooden spatula, and re-tin when copper shows through.
Also called copper tawa with handles.
